Three rules before you buy

1. Never fill past two-thirds. Pressure cookers need headroom; overfilling is the most common mistake.
2. Match the size to your weekly cooking, not the biggest meal. If you only cook for a crowd once a month, buy for the other 29 days.
3. Bigger is not better. An oversized cocotte wastes gas, water and storage space for a small household.
